2nd Night of Hanukkah

Were you wondering what the girls received last night? ;-) They received their gifts from their paternal grandmother and paternal great Aunt. They got some Magical School Bus books and movies, Shrek 3 and a few other videos. We did light candles and Miss Sunshine thought it was a birthday party and attempted to blow them out.

What did I get you ask? A nasty cold!! I am so congested it isn't even funny. Plus the chills and the chance of snow tonight does not warm the spirit. YUCK!

Perhaps I will make Latkes (Potato pancakes) tonight

2 cups peeled and shredded potatoes
1 tablespoon grated onion
2 eggs, beaten
2 tablespoons all-purpose flour or matzah meal
1 1/2 teaspoons salt
1/2 cup peanut oil

Wring out all the excess water and starch from the potatoes

In a medium bowl stir the potatoes, onion, eggs, flour and salt together.

In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties. Brown on one side, turn and brown on the other. Let drain on paper towels. Serve hot!

Easy enough and you can enjoy with sour cream or apple sauce

mmm.... potato pancakes... sorry to hear about the cold. stay inside where it is warm! looking out my window, it is hard to believe that it isn't even officially winter yet. blech...!

Hope you feel better! Mmm...latkes sound good! Considering that the only thing I craved in one pregnancy was hashbrowns with cheese, this sounds right up my alley. LOL
